USE: Compound phosphate has a good role in chelating metal ions and can improve the quality of the finished product. Pork sausage canned, adding compound phosphate (sodium pyrophosphate 60% and sodium tripolyphosphate 40%) when chopping meat. Foreign used for fish meat products, compound phosphate (sodium pyrophosphate 60%, sodium tripolyphosphate 40%). It can be used as cheese melting agent and emulsifier. It can release casein calcium in cheese and increase the viscosity of casein and get soft and extensible products. The use of sodium pyrophosphate, orthophosphate, and partial phosphate is generally used, and the amount is not more than 0.9% (P). Used for soy sauce, bean paste, the amount was about 0.005%~0.3%, which can prevent the browning of soybean paste, improve color.
